Job description:  
BASIC SUMMARY:
Prepare, set up and provide quality service in all areas of food production for menu items and specials in designated outlets in accordance with standards and plating guide specifications. Maintain organization, cleanliness and sanitation of work areas and equipment.

POSITION RESPONSIBILITIES:
• Prepare all food items according to standard recipes and/or as specified on guest check to ensure consistency of product to the guest.
• Visually inspect, select and use only food items ideal for cooking, in preparation of all menu items.
• Assist Culinary leadership in supervising and training culinary team.
• Inform the Sous Chef of any shortages, before items run out.
• Organize all the various items needed from different areas to ensure that all items are in place and ready for service.
• Minimize waste and maintain control to attain forecasted food cost goals.
• Check and controls the proper food storage of product, monitoring age and condition of all food items.
• Maintain proper storage procedures as specified by Health Department and Company requirements.
• Direct and assist stewards in order to make clean up a more efficient process.
• Maintain and strictly abide by state sanitation/health regulations and requirements.
• Maintain complete knowledge of correct maintenance and use of equipment and tools with little or no supervision.

EDUCATION/EXPERIENCE/OTHER REQUIREMENTS:
• High school diploma or equivalent required.
• Two-years previous experience as a Cook in a commercial kitchen preferred.
• Good working knowledge of fundamentals of broiler, sauté, fry, roast, moist heat and other cooking methods; kitchen tools and operations.
• Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
• Certification of culinary training or apprenticeship preferred.
• Work under pressure in a fast pace environment; prioritize and organize work.
• Highly proficient at multiple tasks and prioritizing work.
• Communicate in English both verbally and in writing.
• Perform job functions with attention to detail, speed and accuracy.
• Remain calm and resolve problems using good judgment.
• Ability to work in a team.
• Able to work with all products and food ingredients involved.
• Work rotating shifts, weekends and holidays.
• Schedule vacations during the off-season months.

PHYSICAL DEMANDS – ABILITY TO:
• Grasp, lift, push/pull, carry or transport up to 50 lbs.
• Work extended hours in hot, noisy and sometimes close conditions.
• Bend, stoop, kneel, and reach with hands and arms.
• Stand for length of scheduled shift.
• Work in extreme temperatures.
• Express and exchange ideas by means of the spoken word accurately, loudly and quickly.
• Perceive the nature of sounds at a normal speaking level and make fine discriminations in sound.
• Have visual acuity to determine accuracy, neatness and thoroughness of the work assigned.
